BBQ Cups
(Great for teenagers or folks on the go!)

  • 1 pound Angus ground beef
  • 1/4 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 1 large can pork and beans or pintos
  • 1/2 cup barbecue sauce (add more if desired)
  • 1 tablespoon firmly packed brown sugar
  • 1 (12-ounce) can refrigerated biscuits
  • Chopped jalapenos (if desired)
  • Shredded cheddar cheese

Preheat oven to 350*F. Grease 10 muffin tin.

In large skillet, cook ground beef, onion and bell pepper until thoroughly cooked. Remove from heat and drain. Stir in beans, barbecue sauce and brown sugar and simmer on low heat.

Meanwhile, separate dough into 10 biscuits. Place 1 biscuit in each greased muffin cup; firmly press in bottom and up sides, forming 1/4-inch rim. Spoon about 1/4 cup beef mixture into each biscuit-lined cup.

Bake at for 20 to 25 minutes or until edges of biscuits are golden brown. Cool 1 minute; remove from pan. Sprinkle each with remaining cheese and chopped jalapenos if desired.
